Apricot Sun Leather

These are really easy to make, keep for a long time, are a great snack and are full of vitamin A and iron among other things.

  • 2 pounds apricots
  • 3/4 -1 c honey
  • salt

Method:
Pit apricots and remove any unwanted bits. Put through a juicer. Add honey and salt. Use a hand blender to mix. Pour over baking sheet in thin layer. Place in sun for 2-3 days. Cut into strips and roll up.

    These look wonderful but placing in the sun is not an option in the UK! I wish i had a dehydrator!

    I wish I could eat from your picture! There are similar snack with mango and it was good.
