Easy to make, easier to eat this cherry-almond crunch is delicious for breakfast with yogurt or tasty as an afternoon snack.
- 1/2 c honey
- 1/2 c butter
- 5 c almond flour
- 1/4 t sea salt
- 1/2 t baking soda
- 1/2 t cinnamon
- 1/2 t cloves
- 1/4 c raw cacao nibs, ground (substitute 1/4 c cocoa powder)
- 2 c (12 oz) dried cherries, chopped
Method:
Melt the honey and butter together. Combine remaining ingredients in a bowl. Add the melted butter and honey to the mixture and mix. Press out into a large buttered baking pan. Bake at 350 degrees for 10-15 mins. Remove from the oven and break into pieces and chunks. Bake again approximately 5 mins to make it crunchy. Keep an eye on it as the honey and cherries make it easy to burn. Stir the pieces and bake more if necessary depending on how crunchy you like it.
This is fantastic with yogurt, or homemade cream cheese with fresh fruit. Alternatively eat it with yogurt and dried cherry compote, or use a raspberry-honey syrup. With the added fruit this dish is rich in antioxidants and a powerful protector of your gut especially if you are living in an area with lots of wireless technology or radiation in the environment.
