Kombucha Chicken

Marinating meat in kombucha is a delightful way to add tenderness and flavor. This Kombucha chicken recipe is fantastic, simple and just look how the glazed skin twinkles in the sunlight! This just proves how true it is that the simplest recipes with the most well loved ingredients are often the best.

Method:
Marinate the whole chicken in kombucha and mint sauce 1-2 days. Turn to be sure the whole chicken is immersed.

Remove from marinade, season and roast. Start with oven at 400 degrees for about 15 mins. Turn oven down to 325 and roast for 1 hour. Check to make sure juices run clear before serving. Delicious with summer squash linguini and peas.

    The chicken recipe sounds and looks great. What baffles me is that you call for a range free chicken, and we all know the health benefits of kombucha, but in your opening comment you mentioned “PORK”. Ugh, nothing healthy about that in my opinion. But…I won’t throw the baby out with the bathwater.

      Sorry to offend you with my pork! I get really good pork from a local farm that raises their pork very well, but I know some people are really offended by pork. I am Scandinavian so we quite like pork traditionally, and I grew up in Papua New Guinea where pigs are valued much more than women (!) not that I am recommending such a thing, but just to say that each to their own. In PNG pigs are the only source of protein and fat in many cases and very necessary in their diets. Also there are different breeds of pig that have different effects on health. When it comes to eating it is best not to follow the one-size-fits all method 🙂 so I understand and respect people who feel pork is unhealthy, but I don’t have a problem with eating it myself.
