Favorite SCD / GAPS Almond Bread


I am not exactly sure where I found this recipe at this point. Most likely it was www.pecanbread.com [2] which has an incredible archive of recipes for the SCD or GAPS diets. It is called Lois Lang Light and is a lighter version of the famous Lois Lang Bread. This bread is a wonderful no-grain almond flour bread, that is rich and delicious. The following recipe makes 2 loaves of bread.

If you have a food processor you can add all the ingredients (except egg whites) and process until mixed. Whip up egg whites and fold gently into the nut mixture. Pour into two greased bread pans and bake for around 40 minutes at 325 F.

Alternatively you can add 2t baking soda and add the eggs without separating them and whisking the egg whites. The bread will be lighter if eggs are separated. Either way it is a very tasty bread. We like to toast it and make it into crackers for snacks as well.
