Cheese Souffle

Very simple recipe for a delicious dinner.

  • 4 eggs, separated
  • 1 c dry curd cheese
  • 1/2 c mustard yogurt (or home-made mayonnaise
  • 1 c grated cheddar cheese
  • 1 t tarragon
  • dash salt and pepper

Beat the egg yolks. Blend the curd cheese to flour in a spice grinder or use a food processor. Add the remaining ingredients and blend well. Whip the egg whites to just stiff peaks (don’t get them too stiff) and fold them into the cheese mixture. Bake in small dishes or cups for about 45 minutes at 350 degrees.
