Apple Sauce Souffle

A very simple light and fluffy dish.

Add honey to apple sauce, or if it is sweet enough leave it out. Beat egg whites until stiff and dry. Fold into apple sauce.

Put mixture in buttered baking dish (I like to use teacups). Bake 15 minutes at 350 degrees F.

I generally use my own home-made apple sauce [1] that I make with dates and lots of spices– cinnamon, cloves, cardamom, allspice, ginger…. I will post a recipe shortly. Apple sauce like this makes the souffle like a Chai Spiced Apple Souffle. Alternatively add about 2-3 pods of cardamom (seeds ground), 1 t g. cloves, 2 t cinnamon and 1 t ground ginger to your applesauce when making the above recipe. (Yummy)
