Caucasian Salad a Russian Recipe

  • 2 potatoes
  • 8oz peas
  • 2 carrots
  • 4 oz cold meat (beef or lamb)
  • 2 eggs
  • 2 sweet apples
  • mayonnaise
  • s+p
  • ½ c sour cream

Method:
Cook the potatoes, carrots and peas separately and cool. Dice the peeled cucumber, potatoes, carrots and peeled, cored apples and put in a salad bowl with the peas. Make a stiff omelet with the eggs and let it cool. Dice the meat, cut the omelet into strips and add to vegetables. Mix with dressing made from mayonnaise, sour cream, salt and pepper. Serve chilled.
