Grandma’s Rose Hip Soup

Mormor’s Nypon Soppa

This dish is a favorite in Sweden and contains high amounts of vitamin C. Rose hips also contain many other health enhancing properties. This recipe comes down to me from my mother’s mother (Mormor) who was Swedish. I have altered it slightly for the GAPS or SCD diets.

  • ½ pound (230g) nypon (dog rose hips),
  • 1 cup raisins,
  • 1 Tablespoon almond butter
  • Almonds
  • Honey to taste
  • Cinnamon bark
  • Lemon, juice and rind

Method:
Cook nypon (rose hips) fresh or dried in 4 liters of water for about 2 hours. Stir often and when cooked press through a fine sieve. Add raisins, cinnamon and lemon. Cook 15 minutes. Thicken with potato flour. Add almonds cut in shreds. Add sugar to taste. Serve with whipped cream and macaroons, warm or cold.

    I have never tasted rose hips – didn’t even know they were something to eat – now I am incredibly intrigued – I hope that I run across some sometime so I can try this soup! Thanks for sharing this with us at the Hearth and Soul Hop!

    Ikea sells cartons of premade nypon soup. It’s not bad, but very sweet.
    I spent a short time in Sweden but unfortunately never came across this soup.
    I’m really looking forward to trying this recipe myself. I’ll just have to find a source for rosehips.

      I usually find rose hips in natural food stores, often that is helpful because they may have already removed the seeds and the prickly little rose hairs as well and makes cooking much easier!

    Hello
    I went to sweden many years ago and loved drinking rose hip juice in the mornings. I would love to find some where I live in San francisco. It came in a carton like orange juice but it was deep red and it was rose hip juice. Not the powder. Please help me find it in the bay area. Thanks.

      Thanks so much for your request Susan, I have come across this site Nordic House which imports various Swedish products but they don’t seem to have rose hip juice, I have requested that they get some! Alternatively you can buy a pound of dried rosehips and make your own juice from them. This site seems to have quite reasonable prices: sfherb.com for rosehips.
