Cucumbers Baked in Sour Cream
Serves 4
- 4 medium cucumbers
- salt
- ½ c minced smoked ham
- ¾ c boiled rice
- 1 c sour cream
Method:
Pour boiling water over cucumbers. Stand 15 minutes.
Drain and peel. Scoop out seeds, making a deep pocket for stuffing. Sprinkle with salt.
Combine minced ham and rice; stuff cucumber cases.
Saute on all sides in bacon drippings.
Place in baking dish; pour on sour cream. Bake in moderate oven (350 degrees F) for 30 minutes.
