Mouth of Babes: Good Food for the New Generation

Hella Delicious is currently filming a new series that demonstrates how to prepare foods that will nourish babies as they grow inside their mothers. These foods are also beneficial for couples with fertility issues and for young children.

The foods and recipes demonstrated will be largely based on the nutritional research done by Dr. Weston A. Price who studied communities around the globe in the early 1930s. He found that every traditional society had special sacred foods for pregnant women and growing children.

The main characters in Mouth of Babes are Ruthie, a young pregnant mother and her two year old son, Mikko. The young boy is learning to cook and loves to meet the plants, chickens and cows that are providing for him.

These short 4-8 minute episodes provide easy to follow demonstrations of a variety of foods from around the world and how a hard working young woman can cook nourishing meals for her family while teaching her child the soul satisfying art of cooking.

The most important developmental age for children is from conception to 2 years old. If they are not getting the proper nutrition that their growing bodies need it will affect them for the rest of their lives.

Food is a great communicator catalyst, therefore our episodes will include sustainable communities, demonstrating the benefits of supporting local economy while at the same time remaining connected with communities around the world.

Mouth of Babes ultimately intends to support people to maintain their traditional food-webs and help revive and teach traditional recipes by making them accessible to as many people as possible via the internet.

If you would like to support this project please visit Mouth of Babes. Sponsors will be advertised on the episodes and linked to on all our sites.

The Great Harmonization
This article was originally published in Far West Almanac July 2008.

Last month we witnessed events such as the immense destruction from Cyclone Nargis which continues to kill people in Burma/Myanmar, the earthquakes in China and Peru, and continuing food riots around the world. Food and fuel prices have risen drastically with more price hikes to come. Major banks are no longer eager to give loans to students; and Cleveland, one of the foreclosure hot-beds of the United States, is struggling to continue flights to and from their airport.

Crazier and wilder information continues to come to light charting the depths that greed and power can take. We hear about HAARP: the weather-control project in Alaska, about the Farm Bill 2008 which was finally passed after being vetoed by our ‘President’ yet still doesn’t do what it should to support local small scale food networks, of the Codex Alimentarius which threatens our local food security by claiming to protect our health through centralized factory farms, while there are widespread salmonella outbreaks from tomatoes. Tomatoes!

MUST WATCH FILM:: OUR DAILY FOOD :: Absolutely stunning images of our industrial food system

The more we find out about the various methods multi-national corporations (and the individuals behind them) have used to gain control over our food and health, the more depressed and confused we can become. Who to believe? Is it more naïve to believe what the conspiracy theorists and the corporations are saying or to disbelieve both? Is there really a coordinated effort to poison and dull our brains or is this all somehow just a big accident? And always, the supremely depressing thought—what is the point of worrying about it all if ‘they’ already have such deep, far reaching tentacles which obviously extend to every aspect of society? What can we do anyway? Maybe we should just make the best of what we have and thank our lucky stars….

My sister had a baby on mother’s day. She did it at home, the old fashioned way. I had never seen such a thing happen before. I always took child-birth for granted. But now I have seen a birth I don’t believe what I have seen. Baby Amaia was born just as we were getting disturbing images of whole families, killed or starving from various corners of our world. How many mothers had just lost their homes and families? Looking into little Amaia’s tiny face, and feeling her miniature fingers tighten their grip around my index finger, made me wonder what she will experience in her lifetime? What will she see in her first year of life?

The writing on the wall is no longer something we can ignore. The hand that held the pencil is now slapping us in the face. Fortunately there is a revolution already in full swing, and all it takes to join is to plant a seed. My favorite chef, Alice Waters, first called it the Delicious Revolution. People all over the world are supporting themselves by planting a garden, be it in a pot on a balcony, in an empty city plot or in their back yard. People are out planting. Everyone knows that homegrown tomatoes taste 100% better than store bought ones and it also gives us a chance to get our hands in the dirt, to listen to the earth and to respect where our food comes from.

Eliminating variety and individuality in our food, agriculture, art and music is destroying our health. A perfect example of what results when culture is annihilated is what has happened to bananas. Bananas could easily be extinct in 5 years. Extensive single crop practices have provided a perfect playground for a fast moving fungus. It is called Panama Disease and kills the banana plant completely. The ‘green deserts’ of corporate mono-cultured bananas originate from the days when the United Fruit Company, backed by the CIA, stole land and labor from Guatemala and many other countries, destroying local culture and environment. It is strange to think that the hundreds of delicious banana varieties could disappear before baby Amaia starts first grade.

In Canada, at the moment, there is a bill called C-51 that will regulate herbal products, classifying them as drugs. This bill could potentially make it illegal to give someone a cup of chamomile tea. I have seen this bill before, in the EU and Australia. They all come from the Codex Alimentarius, (food code) mentioned earlier. The Codex is implemented by the Food and Agriculture Organization and the World Health Organization. In the EU products must meet stringent laws which can go as far as to dictate the appropriate angle of the bend in a banana. If the angle is a degree off the banana cannot be sold. It doesn’t comply to the standard.

Such rules are supposedly in place to protect the consumer by ensuring hygiene, uniformity and price. Unfortunately, the result is that large-scale centralized agriculture corporations are protected while family farmers are driven out of their home and livelihood. A perfect example of this is what has happened to the dairy industry in Poland. Thousands of local cheese makers and dairy farms have lost their homes in order to meet the EU hygiene standards. In California, the freedom to consume raw milk is once again under fire.

Codex Alimentarius originally came from the first known example of food regulations, known as the Rheinheitsgebot, a beer purity law, which originated in Bavaria, in 1516. This law was supposed to protect the purity of true beer by allowing only hops, barley and water as ingredients. One of the results was the shutting down of competition from beer makers not following these rigid guidelines, including beers made from herbs instead of hops, limiting the consumer’s choice.

The Codex Alimentarius of today was formed in 1962, by the UN when it created the Codex Alimentarius Commission (CAC). These regulations were proposed by Fritz DerMeer who was found guilty of war crimes for his part in the WWII genocide as president of a large pharmaceutical company. The Codex trade commission aims to “harmonize” all aspects of food and health industries world-wide, giving unlimited control of our most basic necessity to multinational pharmaceutical and agricultural corporations. It is scheduled to come into effect in the USA in 2009.

We all need food to survive on a daily basis. Even a small plot of land can grow a lot of food. Ultimately it doesn’t matter who is president if the laws we make about food in our own country won’t apply in a centralized world trade market. We need to be putting our energy and money into our own future.

Ginitsi Selu/Grandmother Corn: Harmony, Respect, Community, Healing

Lately when I find myself thinking about roots, it isn’t long until I start thinking about corn. Edible corn originated in Central America, a gift of the creator in the form of a “catastrophic sexual mutation” about 7,000 years ago. Now it is prevalent all over the world. Chinese are using it to make cheap alcohol and Italians for creamy polenta. Corn is in nearly every processed food item in the supermarket either as corn syrup or corn starch, and is being used to make ethanol for bio-fuel.

Corn was given to the Europeans as a gift, our stories tell us, when they were on the brink of starvation in a new land. Although we celebrate Thanksgiving every year in communion with family to remember those great
gifts we were given, the gift of corn has ultimately been disrespected and violated by the “gift” the Europeans gave back to the Americas. This “gift” is a mentality that is ultimately self-serving and greedy—entirely against the spirit of corn.

As a result of this greed a huge percentage of our Earth is now forced to support corn that has been manipulated and violated with foreign genes, creating an item that does not fit into the cycle of life. The beautiful varietal diversity of corn is threatened not only by this genetic manipulation but by the greed of corporations that lobby the US government to subsidize corn to the degree that local, small scale farmers have been left without means of survival worldwide. For the last 20 years the US population has been force-fed this Franken-corn in much the same way as a canard duck being stuffed to produce fois gras for the elite.

Corn is a unique plant in many ways, a grain that First Nation legends tell us sprung from the body of a woman (Genitsi Selu) into a plant that relies on human interaction to grow, a self-sacrificing gift to humanity. Unlike other grains such as wheat or rice, corn’s kernels grow in an easy to harvest manner, in neat rows all around the corn cob, protected tightly in a husk. As a result, it will not grow un-aided in and needs mankind to take the kernels and plant them in rows, tightly together in order to support each other in a large community that can withstand high winds and storms. Kernels of black, red, white and yellow can be found cohabitating
happily together on a single corn cob. Corn symbolizes community, working together, self-sacrifice, unity in diversity and democracy.

The same people who offered us the gift of corn also gave us our democracy which is model led on the Iroquois Confederacy (League of the Haudenosaunee). Established about 600 years ago it is the oldest democracy in the world and based on the Great Law of Peace. The Great Law has its roots in the seed and spirit of corn, unity in diversity, many individual communities coming together into a single larger organism. Similar to how the gift of corn has been manipulated for the benefit of the few; the gift of democracy has also been twisted to control instead of support the people.

To be honest, I never gave corn much thought until last year. I grew up in a remote village in Papua New Guinea, daughter of Americans of European descent. The first thing my mother would do, whenever we moved into a new home, was to make a garden and plant sweet corn to give her something familiar in a wild land. As a result of this upbringing I have had a close and personal outsider’s perspective of modern American society and how we are affecting the world. I spent most of my life vaguely uncomfortable, an undercurrent of questions I didn’t dare to think, scratching at me, which found their voice through Father James Guadalupe
Carney who was killed by US trained Honduran security forces: “Do we North Americans eat well because the poor in the third world do not eat at all? Are we free, because we help keep the poor in the third world oppressed?” These are questions that we need to face.

A little more than a year ago we moved to the gorgeous Catskills, where the Great Law of Peace originated and I got a different perspective on my birth place. Small farms and local people all grow and love corn. Every
time we had friends over they brought freshly picked corn from a roadside stand. Every one of them had their own special way to prepare the corn; in husk or out, roasted, or boiled, with or without butter. I finally had
my own garden. Through close proximity to people working the land in small scale respectful ways, I have finally come to see the “down home” side of America. This is the side the world needs to see, not the commercial propaganda distributed by multinational corporations.

We need to embody the spirit of corn. The widespread up-swell of support for local and organic food and small scale artisan products is our best hope for happiness and security. Fortunately we are already well on our way, although we are only recently hearing more about this movement as mainstream media and large corporations jump on the “organic” bandwagon, organizations and individuals have been creating networks of
self-sustainable conscious living for years. The ideals which corn created have deepened and matured, they are just waiting for us to harvest them. We will be exploring these grassroots movements in more depth and
would love your feedback.

Healing with Himalayan Crystal Salt

After I contracted typhoid more than a year ago at a pagoda in Yangon/Rangoon, Burma/Myanmar I was put on a course of serious anti-bacterial medication for ten days which completely wiped out any beneficial flora I had established in my intestines. Not only does it take at least three months to recover from typhoid but it takes at least a year to re-establish the proper balance of micro-organisms within the digestive tract after a course of antibiotics, therefore I have been eating very carefully ever since the experience.

Despite my careful diet I couldn’t seem to regain the full digestive abilities I previously had been so proud of. I tried various fasts and dietary regimes to try to help speed recovery, drinking raw goats milk, making yogurt and religiously avoiding processed foods.

I was beginning to worry that I would never be my old self when Tony Knight the owner of Lotus Magik World based in New Zealand sent me a bag of Himalayan crystal salt, recommending that I try it out. I had never really thought too much about salt apart from assuming that unrefined sea salt is probably better for our bodies than highly processed table salt. As a result I had always wanted to try the Himalayan crystal salt but had never felt I could justify spending very much for a bag of it.

After cooking exclusively with the Himalayan salt for about three weeks I woke up one morning and realized I had my old energy levels back. My digestive tract was in good enough condition to handle a week of Halloween candy, whereas previously one day of eating refined flour and sugar was enough to give me bleeding hemorrhoids and serious mood swings. I hadn’t changed anything else in my diet in the last three weeks. I hadn’t expected to experience any physical changes from using this salt, so it couldn’t have been psycho-somatic either.

Whenever I have been in cold weather and my nose starts to run I have instantly gotten dry, cracked and inflamed nostrils. This had happened to me again earlier in the year when we had a brief cold flash. In the month after using Himalayan salt I realized that it had been cold for two weeks and my nose was fine. I had earlier come to the conclusion that my mucous must be too acidic for my sensitive nasal membranes.

After these experiences I decided to have a look at the health benefits of using Himalayan crystal salt. A few of the main benefits of this salt include alkalinizing your body, promoting digestion and healing of the digestive tract and balancing the body’s fluids, including blood pressure, through homeostasis. There are many more benefits attributed to this salt and I highly recommend having a look at a the sites listed below that go into more detail.

Himalayan crystal salt is mined by hand from huge mountains in Pakistan which 250 million years ago was the bed of the ocean. There are large deposits of this salt available, from a time when the world’s ocean’s had not been polluted with a wide variety of human-kind’s waste, accidents and stupidity.

This salt can be used in a variety of ways not only in cooking, but in skin-creams, baths, and as lamps. I have researched this extensively over the internet and have put together some of the links that I found to be the most informative and interesting:
