CocosPure Coconut Water

Lately I’ve started making coconut water kefir which is used in Donna Gates Body Ecology diet. This diet is similar to the GAPS and SCD diets as it is geared towards healing your digestive system by building optimum levels of probiotics. Coconut water kefir is chock full of probiotics and very easy to make–the key is having a good source of coconut water. Therefore, when I was contacted by CocosPure, a local, socially-conscious BC company, and asked if I would like to be one of their sponsored passions I was delighted!
CocosPure’s coconut water is not dehydrated and rehydrated again like Coca-cola’s various brands, in fact they are one of the few brands around that haven’t been bought up by Coca-cola or some other huge corporate entity. They import their coconut water from a processing plant in Thailand which is right in the middle of a coconut plantation. I am particularly excited about the CocosPure sponsorship as I’ve been saving some water kefir grains for a good supply of coconut water. Now I can rehydrate them to start using on a daily basis. Up to this point I’ve just been using dairy kefir grains to make my coconut water kefir. The problem is that since they are dairy grains, they need to be replaced and won’t just keep on going like water kefir will. I have had several people asking me for water kefir grains–as soon as I get my grains going I’ll be happy to share. Water kefir grains grow really rapidly and particularly like a mineral-rich medium to grow in so coconut water will be perfect.
I’ve been experimenting with various brands of coconut water to make coconut water kefir and the amazing thing is that CocosPure seems specially formulated to make the most delicious coconut kefir. It has the perfect amount of sweetness that results in a lightly tangy, champagne-like refreshing drink that just can’t be resisted and did I mention it is incredibly full of beneficial probiotics? Since we have issues with mold and fungus I haven’t been able to use fresh whole coconuts which, if they aren’t moldy by the time they arrive in our stores, have most likely been dipped in fungicide or bleach, which I am also sensitive to.
